Lemon Marmalade Pork Chops

Elegant but easy, these sautéed chops are sauced with a deglazed pan sauce of marmalade. Next time try another fruit marmalade or preserves. Serve these chops with creamed spinach, mashed potatoes and a fruit salad.

Ingredients:
4 each top loin pork chops
1 tbsp lemon pepper
2 tbsp cider vinegar
1/3 cup lemon (or orange) marmalade
Preparation:
1 Brush chops with a little oil and sprinkle with lemon pepper.
2 Heat large non-stick skillet over medium-high heat; add chops and brown well on each side (about 8-9 minutes total); remove from pan and keep warm.
3 Lower heat and carefully add vinegar and marmalade to skillet, cooking and stirring, scraping up any brown bits on the bottom of the pan.
4 Return chips to skillet, turning once to coat. Serve chops with any sauce remaining in pan.
